A very refreshing quick sambal recipe that can be served with any dish.
Ingredient:
- 2 tbsp shredded coconut
- 1 cucumber, sliced
- 1 lime, juice and rind
- 1 tbsp chopped fresh mint
- 2 tbsp fresh lime juice
- 1/2 red onion, chopped
- 1 red chili, seeded, chopped
- 1 tbsp chopped fresh coriander
- Pinch of white sugar
Direction:
- In a bowl mix the chili, lime rind, coconut, lime juice, mint, cucumber, onion and coriander.
- Season using salt, sugar and pepper.
- Serve fresh.
