Nasi Lemak with Sambal Chili Paste

Nasi Lemak Sambal recipe comes across as a hard recipe because of having so many ingredients but once you get the hold of it, you would realize it is quite simple really. It tastes amazing and is quite popular. 

Ingrediënts: Nasi Lemak

For the rice

  • 1 cup coconut milk
  • 3 cups rice
  • 2-3 pandan leaves, knotted
  • 2 cup water
  • 1 lemongrass
  • 1 tsp salt 

For the accompaniments

  • 6 eggs
  • ¼ cup Kentucky powder
  • 6 ikan kuning
  • 6 chicken wings
  • 10 strings long beans, cubed
  • 6 slices luncheon meat
  • 1 egg white
  • 1 clove garlic, chopped
  • 4 tbsp water
  • 8 dried shrimps
  • Light soy sauce to taste 

For the sambal chili

  • 1 handful dried chili, soaked
  • 1cup olive oil
  • 2 tsp assam water
  • 10 dried shrimps
  • 2 cloves garlic
  • ½ cup olive oil
  • 1 onion
  • 2 tbsp sugar
  • A pinch of salt
  • 1 handful ikan bilis, pounded

Directions:

For the rice:

Throw all the ingredients of rice into a rice cooker and cook according to your rice cookers instruction.

For the accompaniments:

  1. Dip chicken wings lightly into the egg white.
  2. Roll it on the Kentucky powder and deep-fry golden brown.
  3. Fry the eggs, luncheon meat and ikan kuning.
  4. Now fry the shrimps and garlic for 1 minute. Throw in the beans to it and pour water.
  5. Add soy sauce and stir for 2 minutes.
  6. Cover with lid and cook for 4 minutes or until they are soft.

For the sambal chili:

  1. Throw the garlic, dried shrimp, onion, and chili into a blender.
  2. Pour some water into it.
  3. In a pan heat the oil and fry the paste for 4 minutes.
  4. Add assam water, salt and sugar to it. Cook for another 2 minutes.
