All the Sambal recipes are usually very spice, this Sweet Sambal Tumis takes a different route and tastes sweet.
Ingredient:
- 100g dried chilies
- 2 tbsp tamarind juice
- 100g red chilies
- 1 big onion
- 10g ginger
- 250g shallots
- 10g bird’s eye chilies
- 15g galangal
- 15g belacan
- 1 cup cooking olive oil
- 30g garlic
- 50g sugar or palm sugar
- 1 tsp salt
Direction:
- Into the boiled water add the dried chilies for 5 minutes, drain and get rid of the chili seeds.
- In a pan, toast the belacan.
- Place into a blender, and add fresh chili, onion, galangal, ginger, shallots and dried chili to it.
- Pour ¼ cup of water to it and blend into a smooth paste.
- In a pan heat the oil and fry the paste for 20 minutes.
- Pour in the tamarind juice, sugar, and salt to it and cook for another 10 minutes.
